A Southern-style biscuit will not be served every day, but
state officials have given approval for Etowah County Schools to occasionally
include them in the breakfast menu, Laura Parker, the system's Child Nutrition
Program director, told members of the Etowah County Board of Education in June
that students revolted when Southern-style biscuits had to be removed from the
menu and replaced with a whole-grain version. She said whole grains, all the
time, became a requirement last year.
Parker sought a waiver from state health officials to be able to serve a
more traditional biscuit. They didn't receive the waiver, but will be allowed
to serve both types of biscuits. All
other breakfast options will continue to be whole grain, she said, which have
not been a problem. Students have become accustomed to items like whole-grain
pasta and pizza crust. Parker said the
school system has complied with the Healthy, Hunger-Free Kids Act of 2010 and
lunch prices have gradually increased since then.
